Together they approach the food of the Alpine republic through both tradition and contemporary cooking. Guests can choose individual dishes à la carte or follow a menu, giving the restaurant room for different ways of exploring its cuisine. The kitchen follows a nose to tail principle, making thoughtful use of ingredients a central part of its approach. Allergies and intolerances should be discussed when arranging a visit so the team can prepare appropriately. Beyond regular restaurant tables, Rubens has several distinct settings for private dining. The bright ground floor accommodates up to fifty five guests at several tables, with standing tables also possible for events. Downstairs, the Stubn offers a single table for nine in a setting with the character of a wine room. The Safe seats twelve around one table in a former vault, giving a smaller gathering a rather different backdrop. A small foyer connects the two downstairs rooms and can serve as the setting for an aperitif reception. The entire lower floor can also be hired exclusively. Weddings, company gatherings and personal celebrations can be arranged with the team, while catering extends from finger food receptions to meals with several courses. Sauerbraten with red cabbage and dumplings, schnitzel with cranberries, and boiled beef with horseradish sauce show other sides of the same hearty cooking. Smaller appetites can turn to topped rolls, soups or cheese. The brewery's beer also finds its way into the food, including Mainzer cheese marinated in Füchschen Alt with onions and caraway. A shared brewery platter brings together several meats and traditional accompaniments for a group. Vegetarian and vegan dishes have their own section rather than appearing only as side orders, and there are smaller dishes for children. Breakfast is another part of the offer, with a brewery breakfast of meats, cheese and different breads, or fried eggs on bread with ham. The kitchen is led by Sabine Treckmann, while owner Peter König's background combines cooking and brewing. The brewery describes a longstanding connection between its building, its beer and the restaurant. Groups of eight or more can request a reservation by telephone or email; smaller parties are looked after on arrival.
