Casa Juan

Casa Juan is a seafront restaurant in El Palmar whose story dates to 1979. Its cooking brings together seafood from the surrounding coast and vegetables from the gardens of Conil and Vejer. The house calls this approach Producto Km0, emphasizing the ingredients of the area while giving traditional dishes contemporary accompaniments. The menu has a substantial bluefin tuna section. Preparations include tartare with truffle or a spicy seasoning, marinated cubes with mango ajoblanco and seaweed croutons, and grilled tarantelo with vegetable couscous and green tomato compote. Tuna ribs cooked in the Josper come with barbecue sauce and potatoes, while another cut is served with pumpkin and orange cream and roasted garlic. Rice is a central part of the offer, particularly black rice with cuttlefish and rice with scarlet prawns. These dishes are made for at least two people and must be ordered in advance. To begin, there are seasonal tomato salads, fried octopus with avocado and mango, fried anchovies with lemon, and squid with black aioli. Prawn meatballs with pine nut and fried garlic sauce provide another sharing option. Beyond seafood, the menu lists grilled Iberian pork, slowly cooked pluma with mushrooms, and beef sirloin with foie. Desserts include baked cheesecake with pears, lemon sorbet, and chocolate in several textures with salted toffee.
