La Table d'Auré

La Table d'Auré is the restaurant of a hotel in Chamousset, at the meeting of the Tarentaise, Maurienne and Val Gelon valleys. Mallory and Aurélien Moutard run the house, bringing their hospitality backgrounds to a kitchen centered on food prepared in house from fresh ingredients. They work with local producers and choose products according to the season. The setting includes three restaurant rooms and a terrace beside a park of about four thousand square meters. The tourism office describes the grounds as bordered by a small river, giving the address a quieter outdoor dimension. The published menu shows a substantial French repertoire. Starters include game pie with Périgord sauce, eggs in red wine sauce and foie gras with Espelette pepper. Fish choices include Lake Geneva perch prepared meunière and a market fish dish with vegetables. Among the meat dishes are slowly cooked black pork from Pralognan, game stewed with Mondeuse wine, and veal kidneys with Madeira sauce. Larger dishes for sharing include lamb shoulder and beef, while cheese and desserts provide several ways to finish. Tarte Tatin, chocolate cake and roasted figs with blueberries appear among the sweet options. Wine is an important part of the house, with more than a hundred references from across France, a substantial Savoy selection and a choice of Chartreuse. The restaurant also accommodates business meals and groups, with a seminar room equipped for presentations.
