Pizza is the central theme, with an emphasis on combinations that connect Italian tradition with products from Puglia. The kitchen identifies local dairy produce, including mozzarella and provolone made with milk from Puglian farms, alongside Capocollo di Martina Franca, Rosso Gargano tomatoes and extra virgin olive oil from local cultivars. Its oven combines a traditional domed form with a rotating hearth and gas heating.
