Restaurante Azafrán

Azafrán brings Mediterranean cooking with Canarian roots to Calle José Santos in Firgas. Chef José Soto leads the kitchen, drawing on more than twenty years of experience and an interest in giving familiar regional flavours a contemporary presentation. Local ingredients, traditional recipes and modern technique form the basis of the food, with dishes moving between meat, seafood and vegetables. The starters include roasted burrata with confit tomato, rocket, balsamic dressing and pine nuts, and octopus with potatoes and smoked paprika mayonnaise. Another option pairs puff pastry with salmon curry and grilled asparagus. Beef tartare is cut by hand and prepared at the table, while beef cheek and foie croquettes come with green apple and ginger. Rice dishes provide several possible centres for a meal: one uses scarlet prawns and a concentrated seafood stock, another combines the day's fish with squid and mussels, and a creamy version brings together Iberian pork and roasted peppers. The main courses also include beef cheek with mushrooms and saffron potatoes, veal ragù cannelloni and the chef's version of traditional meatballs. Grilled sea bass with butter, lemon and capers sits alongside beef fillet and Iberian pork cuts. Desserts range from tiramisu and cheesecake to cream filled crêpes and profiteroles with vanilla foam and hot chocolate.
