El Alférez faces Playa El Palmar from the seafront promenade, with a terrace and a kitchen shaped by the sea. The restaurant connects its food to family tradition while making room for contemporary combinations. Its principal ingredients are local seafood and bluefin tuna caught by the almadraba method, and its signature rice dish features carabineros, the large scarlet prawns associated with this stretch of coast. The main menu provides several ways into a meal. Shared starters include smoked sardines with curd cheese and green tomato jam, artichokes with Payoyo cheese cream and mojama, and croquettes served over Parmesan cream. Soups and stews bring a more substantial side of the cooking: chickpeas with prawns, beans with octopus, and a fish soup with prawns and clams. Rice dishes are prepared for a minimum of two diners. Alongside the scarlet prawn version are black rice with squid and clams, fideuá with shellfish, and mushroom risotto with truffle. Fish from the market depends on availability; the menu also offers grilled squid, baked squid with olive oil, and fish with clams and prawns in the Roteña style.
