San Wan Hand Pulled Noodles

San Wan is a Chinese noodle restaurant on the basement level of Cluster F in Jumeirah Lakes Towers. Its kitchen centres on the hand stretching traditions of Shaanxi, with dough pulled to order in view of diners. The preparation is part of the appeal: fresh strands move from the counter into boiling water before becoming bowls of soup or noodles dressed with aromatic sauces. Traditional biang biang noodles are wide and served with green onion, garlic, chilli, soy sauce and Chinese black vinegar, finished with hot oil. A beef noodle soup takes a different approach, combining thin noodles with beef broth, white radish, coriander and marinated slices of meat. Chicken wonton noodle soup brings together freshly made dumplings, chicken broth and pak choy. Other choices include tomato and egg noodles, cumin lamb noodles and a sesame dressed dan dan version with peanuts and crispy garlic. The menu extends beyond noodles to steamed bao, dumplings and wontons filled with chicken, beef or vegetables. Smaller plates include crispy enoki mushrooms, tofu and shredded potatoes cooked with chilli and vinegar. These can accompany a main bowl or form a more varied meal for the table. Indoor seating has warm lighting, and shaded outdoor tables provide another place to sit. The restaurant also offers collection and delivery for meals at home or in the office. Its focus remains the same across the different dishes: freshly worked dough, regional Chinese seasonings and food prepared to order.
